Recipe: Banana Porridge

Eggs, Eggs, Eggs….everyone gets tired of eggs for breakfast. Here is an “oatmealish” recipe that is really good and very filling. Watch your portions!!! It is possible to want to eat the whole pot in one sitting! This is a good recipe if you are able to tolerate cashews, almonds and pecans! If you are consuming dairy, a little heavy cream is yummy in it! It is actually a really easy recipe. Double the recipe if it you want leftovers. Enjoy!

Banana Porridge

  • ½ cup raw cashews
  • ½ cup raw almonds
  • ½ cup raw pecans
  • Pinch sea salt
  • 1 ripe banana
  • 2 cups full fat coconut milk
  • 2 teaspoons cinnamon

Soak nuts for 24 hours. Rinse until water runs clear. Add nuts to food processor and chop, then add coconut milk, banana and cinnamon. After mixing all ingredients, pour porridge into pot and simmer until it thickens, about 8 min.
